Sardinian winemakers have always used natural processes and for this reason the unique aroma and taste of their wines have been appreciated throughout the world for centuries, enchanting all who drink them, inspiring writers and becoming the pride of Sardinia. To ensure that the wine is conserved for any length of time, it is necessary to have a high alcohol percentage - which is achieved thanks to the extended growth time of the grape - meaning there is no need to add artificial ingredients to prolong the life of the resulting wine. Unfortunately, this rule is no longer respected due to commercial production as the common market requires a lower alcohol percentage than is normally the case with wines produced on the island.

Due to the tradition of high alcohol percentage, the Cannonau, as with other wines, can have an alcohol content of up to 14° - 15°.

The vine, growing on trellis rows, is kept as high as possible from the ground ensuring that the grape does not touch the earth. In other areas a different technique is used, in other words the vine is not attached as firmly to the trellis so the grape sometimes touches the ground. Recently, the winemakers are experimenting with other high-trellis techniques used in other parts of Italy.
